MACADAMIA NUT ENERGY BAR HIGH ENERGY SNACK FOR ACTIVE ISLAND LIFE Makes about 16 bars
Preheat oven to 325°
2 tbs Water 1 tbs Pure honey 1 tsp Baking soda 1/2 c. Butter, softened (or margarine) 3/4 c. Flour 1-1/2 c. Oatmeal old fashioned (not quick), uncooked 3/4 c. White sugar 3/4 c. Island Princess Baking/Cooking Macadamia Nuts, lightly chopped 1/2 c. Coconut flakes
In a small saucepan, combine the water, honey and baking soda. Bring to a boil then stir in butter. Set aside to cool for about 5 minutes. In a mixing bowl, combine flour, oats, sugars, Macadamia Nuts and coconut. After having cooled for 5 minutes, blend in honey mixture. Spread into 8 x 8-inch lightly greased baking pan and bake for 20 minutes or until top is a nice light brown. it will be a little soft to the touch when taken out of the oven but will set when cool. Cool for about 5 minutes then cut into bars. Transfer bars to rack to finish cooling before eating.
Optional: Add 3/4 c. Raisins
