1 1/2 cups Sugar 1 cup Butter Flavored All Vegetable Shortening plus enough to grease pan 1 cup Creamy Peanut Butter 3 Eggs 3 cups All Purpose Flour 1/2 tsp Salt 1 tbs Cream of Tartar 1 tsp Baking Soda 7 oz Island Princess Mini Meles
Preheat oven to 375 degrees. In large bowl, combine sugar and shortening. With electric mixer, beat at medium speed until blended well. Beat in peanut butter and eggs. In separate bowl, mix together flour, salt, cream of tartar, and baking soda. Add the dried ingredients mixture gradually to creamed mixture at low speed and mix until well blended.
Grease baking sheet with leftover shortening. Shape dough into 1 1/4 inch balls and place 2 inches apart on baking sheet. Press center of dough ball with tip of finger. Lightly place one Mini Mele piece into impression.
Bake 9 to 11 minutes or until golden brown.
Remove from oven, cool a few minutes before removing cookies to final cooling rack.
Makes about 4 1/2 dozen.
