SWEET CHILI MACADAMIA NUT CHICKEN
1 c. Island Princess Sweet Chili Macadamia Nuts 1 1/2 lbs Boneless chicken, cut into bite sizes 40 - 50 Pieces of chopped, dried chili peppers, deep fried until crispy 1 c. Diced zucchini 8 tbs Sliced onions 8 tbs Green onions, cut in one-inch pieces 8 tbs Vegetable oil or macadamia nut oil 4 tbs Fish sauce or oyster sauce 12 tbs Chicken stock or hot water Ground black pepper to taste
Heat vegetable (or macadamia nut oil) in pan and saute chicken until cooked. Increase heat to high and add zucchini, oyster cause, fish sauce and black pepper. Saute for 15 seconds. Add chicken stock. Cook for about one minute, until about half of the liquid has evaporated. Add Island Princess Sweet Chili Macadamia Nuts, crispy dried chili, sliced onions and green onions. Saute for about one minute or until the onions are cooked.
