(Red Snapper)

4 Opakapaka filets
4 tbs Vegetable oil
5 tbs Margarine
1 tbs Lemon juice
2 tbs Parsley, finely chopped
1/4 c. Drained capers
2/3 c. Island Princess Baking/Cooking Macadamia Nuts, finely chopped
Salt and pepper to taste

Season fish with salt and pepper, then coat on both sides with macadamia nuts. In skillet, heat oil and 1 tbs margarine. Add filets and cook until golden brown on one side, basting fish as it cooks. Turn pieces and cook for 3 minutes. Place fish on warm platter. Heat remaining margarine in a small skillet until it begins to brown; add capers and cook over high heat, shaking and stirring. Add lemon juice and pour mixture over fish. Sprinkle with parsley and serve.
