MACADAMIA NUT MOCHI *

Preheat oven to 375º. Grease a 9 x 13-inch baking pan.

1/2 c. Butter
1/4 c. Margarine
2-1/2 c. Sugar
2 lbs Mochiko (sweet rice flour)
1/2 c. Powdered milk (milkman brand)
2 (2-oz) Packages powdered haupia mix (Noh brand is called Haupia Luau Dessert)
6 c. Water
1 c. Island Princess Banking/Cooking Macadamia Nuts, chopped
1/2 c. Shredded sweetened coconut (optional)
Potato starch or cornstarch to dust

Cream butter, margarine and sugar in a large mixing bowl. Add mochiko, powdered milk and haupia mix. Slowly add water. Mix until smooth. Fold in nuts and coconut, if using. Pour into prepared pan. Bake for 1 hour. Cool completely, then cut into pieces using a plastic knife. Dust with potato or cornstarch to prevent sticking.
