MACADAMIA NUT CHICKEN CURRY SALAD
Dressing
8 oz plain yogurt 1 tbs frozen orange juice
concentrate
1/2 - 1 tsp curry powder (to
taste)
Combine ingredients for dressing.
Chill for at least one hour.
Salad 4 c.
salad greens
2 c.
cubed cooked chicken 1 large
orange, peeled and diced 1 medium
banana 1/2 of
8 oz can (1/2 cup) jellied cranberry
sauce, chilled and cut in
1/2-inch cubes 1/4 c.
raisins 1 c.
Island Princess Macadamia Nuts plain,
lightly salted or curry flavored
Place
salad greens into large salad bowl. Arrange
chicken, orange pieces, banana slices, cranberry
cubes, raisins and macadamia nuts on top of
lettuce.
Chill
until ready to serve.
Immediately
before serving, mix dressing with salad. Toss well.
